Kumara hash eggs benedict

Eggs bene is one of my favourite brunches! 90% of the time when I go out for breakfast or brunch this is what I’ll order.

This is my take on the dish switching the bread out for a yummy kumara hash.

Serves 4

Ingredients 

  • 1 medium sized kumara, grated
  • 3 tbsp of flour
  • 5 eggs
  • salt and pepper
  • 2 tbsp chopped chives
  • 4 pieces of bacon (or more if you like)
  • hollandaise sauce (Kato brand is my favourite)

Method 

  1. In a large mixing bowl put your grated kumara, 1 egg, flour, chives and salt and pepper. Mix well.
  2. Heat a frying pan with some olive oil or butter. Create four patties with your kumara mix and place into the hot pan. Fry for approximately 4 minutes each side but keep an eye on them so they don’t go too brown or burn.
  3. Once cooked set aside.
  4. In a pan heat some water to the boil with a capful of white vinegar in it. Place your eggs in and leave to cook for approximately 3 minutes.
  5. While your eggs are poaching, cook your bacon. Crispy is best!
  6. One everything is cooked place your kumara hash on a plate, top with the bacon and egg and top with a generous amount of hollandaise!

Now eat it all up! Yum! X
