Slow cooker green curry

Slow cooked meals are one of my favourite things during winter. Nothing beats walking in the front door after a long cold day to the smell of delicious food wafting through the house.

It’s so satisfying sitting down to a meal that has taken minimum effort and warms you from the inside out.

This is very simple and I’m sure the whole family will enjoy it.

Serves 4

Ingredients 

  • 1/2 jar green curry paste (I use Valcom brand)
  • 400ml coconut cream
  • 1 cup chicken stock
  • 6 chicken pieces
  • 1 bag of frozen mixed veggies (or chopped up fresh veggies)
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tbsp brown sugar
  • brown rice to serve
  • fresh herbs to serve e.g., basil and coriander

Method

  1. Heat a little amount of oil in a pan and add the green curry paste. Heat for 2 minutes.
  2. Add in coconut cream and chicken stock and continue to heat for 1 minute.
  3. Place this mixture into the slow cooker with your chicken pieces.
  4. Cook on low for five hours.
  5. Half an hour from when you want to eat place the bag of frozen veggies in the slow cooker along with the fish sauce, lime juice and brown sugar.
  6. Cook your rice according to packet directions.
  7. Place your rice in the bottom of the bowl, topped off with some chicken and a big scoop of the liquid.
  8. Garnish with your herbs of choice.
