This is an easy dish to make during the week. This can also be made in advance and just chucked in the oven when you’re ready.
Usually I would make the pasta sauce but I made this the day after we got home from our trip so was still feeling the time difference a little bit so was after something that wouldn’t take hours.
This is a family friendly dish and can be easily adjusted to your own preferences. Eg, swap the sausage for another meat such as diced chicken, switch up the filling with a bit of basil and bacon. It’s one of those dishes that can be made with what you have leftover in the house.
Ingredients
- 5 or 6 good quality sausages (pork or beef)
- 1 packet of jumbo pasta shells
- 2 tbsp crushed garlic
- 3 cups chopped spinach
- 1 brown onion – diced
- 1 jar pasta sauce (or you can make your own)
- 1 cup ricotta
- 1 cup grated cheddar and extra to sprinkle
- ½ cup parmesan and extra to sprinkle
Method
- Preheat oven to 200 degrees celcius.
- Empty the sausage meat of of the casings and brown lightly.
- Cook the pasta shells according to packet instructions.
- In a pan heat a tsp of olive oil and soften garlic and onion.
- In a bowl mix the ricotta, cheddar and parmesan with the garlic, onion, spinach half of the sausage meat and season with salt and pepper.
- Pour ¾ of your pasta sauce into a greased oven dish.
- It’s now time to start stuffing your shells. Place 1-2 tbsp of the cheese mixture into each shell followed by the tbsp of the sausage. Place into the dish. Continue with the remaining shells and mixture.
- Add the remaining sauce in dollops in the oven dish and sprinkle with mozarellla and parmesan. Season with a little sauce.
- Place in the oven for 15 minutes.
Serve with garlic bread and a green salad.
