Quinoa, blue cheese and pear salad

This salad is quick to make and is perfect for dinner paired with some meat of your choice (I’m serving this with chicken tonight) or take it along as a dish for a pot luck dinner or BBQ.

Ingredients

  • 1/2 cup quinoa
  • 100g creamy blue cheese
  • 2 pears
  • 1 – 2 tbsp sliced almonds
  • 1/2 tsp chicken stock powder
  • S + P

Method

  1. Cook your quinoa according to packet instructions with the chicken stock powder.
  2. Crumble your blue cheese.
  3. Slice the pears into small matchsticks.
  4. Combine the cooked quinoa, blue cheese, pears, sliced almonds and S + P and you’re done! Simple as that.
