This salad is quick to make and is perfect for dinner paired with some meat of your choice (I’m serving this with chicken tonight) or take it along as a dish for a pot luck dinner or BBQ.
Ingredients
- 1/2 cup quinoa
- 100g creamy blue cheese
- 2 pears
- 1 – 2 tbsp sliced almonds
- 1/2 tsp chicken stock powder
- S + P
Method
- Cook your quinoa according to packet instructions with the chicken stock powder.
- Crumble your blue cheese.
- Slice the pears into small matchsticks.
- Combine the cooked quinoa, blue cheese, pears, sliced almonds and S + P and you’re done! Simple as that.
