Cauliflower pizza

Ahh. I’ve finally nailed it! After many attempts at making the perfect cauliflower pizza (many failed attempts and many average ones) I think I’ve done it!

This is a good way to still get your pizza fix if you’re gluten free, giving grains a miss or just feel like something different.

This takes a little while but the end result is delicious.

Let’s get started!

Prep time: 30 min
Cooking time: 35 min

Serves 2

Ingredients

Base

1 small head cauliflower (or 1/2 large)
1/4 cup grated parmesan
1 egg
2 tbsp almond meal
1/2 tsp mixed herbs
1/2 tsp chilli powder
S & P

Toppings

3 tbsp basil pesto
75g prosciutto
1/2 cup cherry tomatoes
75g fresh mozarella

Preheat your oven to 200 degrees celsius.

Roughly chop up your cauliflower and place in a food processor and pulse until rice like. If you don’t have a food processor you can grate the cauliflower to achieve a similar result.

Place your cauliflower in the microwave for 5 minutes then allow to cool. This is so some of the liquid leaves the cauliflower so you get a crispier base. Once it is cool, place your cauliflower in a cheese cloth or tea towel and squeeze until you have a dry little ball of cauliflower (hmm, I’m not making this sound too appetising right now!). Once you’ve squeezed your cauliflower mix in the parmesan, chilli, mixed herbs, egg and almond meal.

On a tray lined with baking paper form your cauliflower mix into a circle shape. Place in the oven for 25 minutes (keep an eye on it in case your oven is stronger than mine).

While this is cooking you can start preparing your toppings. Chop your prosciutto, chop your cherry tomatoes in half and scoop out the seeds (don’t ask me why I do this, I don’t really know, but my friend Han does this and it works nicely so I’ve started doing it too. I guess it stops the inside of the tomato squirting out.. again, no idea..). Slice your mozzarella.

When your base starts looking crispy bring it out of the oven and place the basil pesto on it, followed by the mozzarella, prosciutto and cherry tomatoes. If you have pine nuts they would go well with this.

Place in the oven for 8 minutes until the cheese is melted and your toppings are hot.

Now gobble it all up!
