I love salmon bagels! These are our favourite weekend brunch – quick to prepare and even quicker to munch down.
My partner and I are spending the weekend in Martinborough soaking up the sun (bloody hell it’s warm!) and celebrating our engagement – Blair popped the question last week and since then it’s been non-stop bubbles and loving life. We thought we would escape to the Wairarapa for a few days and catch our breath – and we’re checking out a couple of wedding venues too – no mucking around!
Salmon bagels are a perfect breakfast for when you’re away because they require very little equipment – just a toaster!
Serves 2
Ingredients
2 salmon bagels
100g smoked salmon
cream cheese (we use spreadable)
red onion
capers
Start by toasting the bagels. While these are toasting slice the red onion finely and drain a tablespoon of capers.
Once the bagels are toasted spread with cream cheese, salmon, red onion and capers. Serve with a wedge of lemon juice and you’ve got yourself a delicious brunch. Dill also adds a nice touch.
