This is really quick to put together and makes the perfect quick midweek meal or addition to a barbecue dinner.
I made this over the weekend and took it to a surprise party we held for my friend (not so surprise really as the little detective friend of ours figured out something shady was going on, damn!).
I’ve also made this as a main meal which was a hit.
Serves 4 as a main meal
Ingredients
1.5 cups risoni/orzo
1.5 tsp of chicken stock
2 cups baby spinach
Juice of half a lemon
1 tbsp olive oil
1 tsp of chilli flakes (or more depending on how spicy you like your food)
2 pre-cooked chorizo sausages
Sliced almonds
Method
Cook the risoni/orzo in 3 cups of water mixed with the chicken stock. You can do this by boiling on a pot, or if you have a rice cooker you can use this (thanks to Hayley for this tip, it also works for quinoa).
While this is cooking, slice your chorizo and pan fry lightly. Put this aside. Chop up your spinach.
When your risoni is cooked mix in the olive oil, lemon juice, chilli flakes, spinach and chorizo. Top with the sliced almonds and then you’re done!
