This is an awesome vegetarian dish that can be a main meal, side dish or something you take along to a BBQ during summer.
Serves 4 as a main
Cooking time: 30 min
Ingredients
1 cup dry bulgur
200g haloumi – sliced
3 tbsp cajun seasoning (recipe to make your own below or buy the Masterfood’s one)
1 can corn kernels – drained
1 can black beans – drained
1 cup cherry tomatoes chopped in half
1 spring onion – thinly sliced

Cajun seasoning
1 tbsp smoked paprika
1 tbsp paprika
1 tsp black pepper
1 tsp salt
1 tsp thyme
1 tsp oregano
1/2 tsp garlic powder
1/2 tsp cayenne pepper
Mix all ingredients in a jar – that way you can store the leftovers easily by chucking on a lid.
Start by cooking your bulgur by following the packet instructions.
While this is cooking, coat your sliced haloumi in 2 tbsp of the cajun seasoning and then pan fry until golden brown on each side.
Once your haloumi is cooked pan fry your corn lightly to brown it slightly.
Now mix your bulgur, haloumi and corn with all of the remaining ingredients in a bowl and then hey presto, you’ve got yourself a delicious meal!
