My lovely bestie came over for dinner tonight so I cooked up these beauties – forgot that she doesn’t like avocado (oops) so this is the ultimate taste test.
Ingredients
Base
1.5 cups almond meal
2 tbsp pure maple syrup
1.5 tbsp cocoa
Filling
2 avocado
150g dark chocolate (70% cocoa)
2 tbsp pure maple syrup
1 cup unsweetened almond milk
Berry topping
2 cups berries of your choice
1 tbsp maple syrup
1/2 cup of water
Start by mixing the almond meal, maple syrup and cocoa. Press into tart tins and put in the freezer for atleast an hour.
While the base is setting melt your chocolate by putting it in a glass bowl over a pot of boiling water and stirring. Once melted, allow to cool and then mix in a blender with the avocados to make the mousse.
Now it’s time to make your berry topping. Put the berries and water into a pot and simmer until the water reduces. Once reduced mix in the maple syrup.
Now you can assemble your tarts. Place your mousse in the tart bases and then top with berry mixture. Simple!
