Crunchy chocolate granola

This is a quick and healthy breakfast that can be prepared over the weekend and eaten for breakfast during the week. It takes less than 5 minutes to prepare and then 30 minutes in the oven.

Ingredients

1/2 cup shredded coconut
1/2 cup oats
1/2 cup pumpkin seeds
1 cup buckwheat
2 tbsp pure maple syrup
1 and 1/2 tsp cocoa
1 tbsp of olive oil

Preheat oven to 180ºC on bake.

Mix all ingredients in a bowl.

Place in the oven for 20 minutes. Once the 20 minutes is complete give the granola a shake and then place back in the oven for 10 minutes.

Serve with yoghurt and your favourite fruit. Berries and banana work well with the chocolate flavour.

Keep in an airtight container. Eat within 2 weeks.
