Creamy avo & prawn wonton cups

Ah these are so yum. They look so pretty so are perfect as canapés or serving as an appetiser.

Makes 12

Ingredients

12 wonton wrappers
3 medium avocados
3 tbsp of aioli (aioli recipe here)
1 mango
24 prawns
1 tsp chilli powder
1 tsp crushed garlic
1/2 lime

Preheat your oven to 200°C.

Wash and devein your prawns. You can remove the tails if you like or leave them on. It’s just up to you and depends on what you prefer. Place them in a bowl with the chilli powder and crushed garlic and leave to marinate while you prepare the other ingredients.

Lightly oil a muffin tray and then place the wonton skins in these. Spray with oil once sitting in the muffin tray. Place in the oven for 6 minutes (keep an eye on these as they can brown very quickly.)

Meanwhile, scoop the avocado into a bowl with the aioli and mash until mixed together. Chop the mango into small pieces and add to this mix.

When the wonton skins are out leave them to cool for a few minutes while you cook your prawns. Place the prawns in a lightly oiled frying pan and cook until translucent. When these are ready you can start assembling the wonton cups.

Start with you wonton cup and scoop approximately 1 tbsp of the avocado and mango mixture into it. Top with 2 prawns, some chopped coriander and lime juice.

Note: because of the avocado in this it will brown rather quickly. If you plan on making them a little ahead of time I recommend adding some lime juice to the avo mixture to prevent this from happening. If you take that approach you won’t need too much lime juice on top.
