Last night I had a craving for something a little bit crispy and spicy so I chucked this together.
This took approx. half an hour from start to finish (was a lot quicker to demolish it!).
Serves 4
Ingredients
400g skinless, boneless chicken thigh cut into bite site pieces
1/2 cup sweet chilli sauce
2 tbsp soy sauce
1 tsp ginger
4 tsp garlic
1 cup cornflour
1 tsp baking powder
flavourless oil for shallow frying (canola etc)
1 tbsp sesame seeds
Rice and greens to serve
Method
In a bowl mix the chicken, soy sauce, ginger and garlic. Marinate for at least 10 minutes.
Once finished marinating coat the chicken in the cornflour and baking powder.
Heat up a frying pan with a few cms of oil and shallow fry the chicken until golden brown. Drain on paper towels.
Clean your frying pan and heat to medium with oil. Transfer the chicken into your frying pan with the sweet chilli sauce. Once the chicken is coated in the sauce, remove.
Serve with rice and greens and season with the sesame seeds.
So yummy. Even got the tick of approval from my fussy teenage brother!
