This is delicious but also refined sugar free, grain free and gluten free.
I had a raw snickers slice at Seize cafe last year and it was incredible! I wanted to recreate it so when I can’t make it there I can whip up a batch.
It does tend to melt quickly and go a bit goopy so keep it in the fridge/freezer as long as you can and between serving.
Base
1 cup dates – medjool or dried.
3/4 cups desiccated coconut
1 cup almond meal
2 tbsp water
1 tsp salt
Filling
2 cups dates (soaked for 30 minutes)
1.5 cups peanut butter
1/2 cup almond milk
1/4 cup maple syrup
2 tsp vanilla extract
Ganache topping
200g good quality dark chocolate
165ml coconut cream
1 tsp salt
To begin, soak your 2 cups of dates for the filling in water and leave to sit for at least 30 minutes.
A food processor is super handy for this but you can do it without one. Thankfully my food processor back in action! I never realised how much I used mine until I couldn’t. Turns out I didn’t need to be without it at all though. I purchased a new part which arrived the next day (amazing service from Need a Part – they have basically everything if you’re missing a part from one of your appliances) anyway as Murphy’s Law has it, later that day I came across said key part that was missing from the food processor. Now i have two.. I guess if I ever lose it again (likely) I have a spare!
Now back to whipping up this amazing slice. Place all of the base ingredients in your food processor and pulse until fine and sticky. If you don’t have a food processor finely chop the dates and mix with other ingredients. Place the base ingredients in the bottom of a slice tin lined with baking paper and then place in the freezer while you prepare the filling.
To prepare the filling again put all the filling ingredients in a food processor or blender and blitz until fine and sticky. Place on top of the base ingredients and put in the freezer for at least an hour to set.
Once the slice is set whip up your chocolate ganache. To do this heat a small pot of water and place a glass bowl over top. Break the chocolate up into small pieces and place in the bowl and melt over the heat. Once the chocolate has melted add in the coconut cream and stir together until smooth.
Once cool, pour the chocolate mixture over the slice, sprinkle with salt and place in the freezer for a few hours to set.
Serve with some plain yoghurt, or on its on. Delish!
